There's a song about a meal, I love this version of the song I found on - /watch?v=xVvL4-srt6U which would do just fine in your crockpot. Easy and economical and sure to please all the hillbillies in your family as much as it pleases the hillbillies in our family. Give it a try. If your favorite roadkill is not available you can substitute a nice pork roast.
Ingredients:
5 lbs possum, removed from your high beams, skinned and dressed or 5 lbs pork roast, browned on all sides
1 onion, sliced
1 fennel bulb, sliced
2 garlic cloves, quartered and stuffed into possum
5 lbs potatoes, fingerlings
4 carrots, chunked
4 celery ribs, chunked
salt and pepper
1 bouquet garni
1 1/4 ounces onion soup mix
3 cups water
Directions:
1. Place all ingredients into the crockpot and set on high for 5 hours and then on low for 5 more hours.
2. Serve with biscuits or corn bread. Mmmmmm.
