Ingredients:
1 shallot, chopped |
2 garlic cloves, minced |
2 tablespoons olive oil |
1/2 teaspoon kosher salt |
1 tablespoon tomato paste |
1 cup beer |
4 cups chicken broth |
1 tomato, chopped |
2 6-ounce hallibut fillets, cooked or raw |
12 mussels |
12 fresh or thawed frozen shrimp, peeled |
1/4 cup fresh parsley, chopped |
steamed halibut with kale and walnuts |
Directions:
1. Saute shallot garlic in a stockpot with olive oil for 2 minutes. Add salt and tomato paste; cook 1 minute. Add beer and cook until absorbed. Add chicken broth; bring to a boil. Add tomato and halibut fillets cut into chunks; simmer, covered, for 5 minutes. Add mussels and peeled fresh or thawed frozen shrimp and cook 5 minutes more. Add parsley before serving. |
