Ingredients:
1 shallot, chopped
2 garlic cloves, minced
2 tablespoons olive oil
1/2 teaspoon kosher salt
1 tablespoon tomato paste
1 cup beer
4 cups chicken broth
1 tomato, chopped
2 6-ounce hallibut fillets, cooked or raw
12 mussels
12 fresh or thawed frozen shrimp, peeled
1/4 cup fresh parsley, chopped
steamed halibut with kale and walnuts
Directions:
1. Saute shallot garlic in a stockpot with olive oil for 2 minutes. Add salt and tomato paste; cook 1 minute. Add beer and cook until absorbed. Add chicken broth; bring to a boil. Add tomato and halibut fillets cut into chunks; simmer, covered, for 5 minutes. Add mussels and peeled fresh or thawed frozen shrimp and cook 5 minutes more. Add parsley before serving.
