Fish with Spinach and Feta Ingredients:
1 tablespoon olive oil |
2 garlic cloves, minced |
1 bunch spinach |
1 cup salsa, strained |
1 lb fish fillet |
1/2 teaspoon pepper |
1/2 teaspoon salt |
1 cup herbed feta cheese |
Directions:
1. Spray baking dish with pam. 2. Preheat oven to 450 deg. 3. In skillet heat oil over med.low heat add garlic and stir for 1 minute add spinach a handful at a time till wilted. 4. Stir in salsa, remove from heat. 5. Arrange 1/2 mixture into baking dish. 6. Season fillets with salt and pepper and put on top of spinach mixture. 7. Top with remaining spinach mixture. 8. Top with crumbled feta and bake for 15- 20 minute. |
