Make this 5-ingredient, low-fat fish taco recipe your go-to recipe for a healthy weeknight dinner. Ingredients:
8 soft corn tortillas |
3 (6-ounce) poached cod fillets, flaked |
1 teaspoon grated fresh ginger |
2 teaspoons fresh lime juice |
1 bunch arugula (washed, dried, and chopped) |
Directions:
1. Heat oven to 400°F. Wrap the tortillas in aluminum foil and heat in the oven until warm and slightly softened, about 5 minutes. 2. Meanwhile, in a small bowl, combine the cod, ginger, and lime juice and toss. Spoon some of the fish onto a tortilla, then top with some arugula and guacamole, if desired. |
