Mediterranean style. Ingredients:
1/2 lb tilapia, cut into pieces |
1/2 lb shrimp |
1/2 lb scallops |
2 tbsp extra virgin olive oil |
1 onion, finely chopped |
1 stalk celery, chopped |
4 cloves garlic, minced |
1/4 tsp saffron |
1 red bell pepper, roasted and diced |
2 cups tomatoes, diced |
1/4 grams bay leaves , (1 leaf) |
1/4 cup fresh parsley, chopped |
1 tsp herbs de provence |
1 cup water |
1 freshly ground black pepper |
1/2 cup whole wheat elbow macaroni |
Directions:
1. Heat oil in a sauce pan. Add onions, celery, garlic and peppers and sautee until onions are translucent and vegetable are soft. 2. Add tomatoes, water, and spices. Bring to a boil, then simmer, covered, 5 minutes. Add pasta and simmer, covered, 7 minutes. Add fish and bring to a slow boil for about 3 minutes. 3. Serve sprinkled with fresh parsley. |
