This is a recipe passed down from my Aunt. It's very simple but tasty. Ingredients:
16 ounces tomatoes |
1/2 cup white wine |
1/4 cup fresh parsley, chopped |
1 teaspoon dried basil, crushed |
16 ounces chicken broth |
1/8 teaspoon sugar |
pepper, to taste |
1 lb fish fillet, cut into bite size pieces |
Directions:
1. Combine tomatoes, wine and parsley in a sauce pan. Bring to a boil, reduce heat, and simmer for 2 minutes. 2. Add remaining ingredients and simmer, stirring often, for 10 minutes or until fish is cooked through. |
