This Japanese treat loved by children and adults alike is easy once you get a fish iron. It will work with any of your favorite pancake or waffle recipes. I like to put apple, raisins and nuts into mine and they taste even better the next day plain because of the moisture of the apple and raisins. You can also try your own variations. Ingredients:
4 tablespoons all-purpose flour (half of it can be whole wheat flour) |
1/2 teaspoon baking powder |
3/4 teaspoon sugar (or brown sugar) |
1 dash salt |
1 egg, beaten |
1/4 cup milk |
2 teaspoons butter, melted or 2 teaspoons oil |
1 dash vanilla |
1/4 cup chopped nuts |
1/4 cup raisins |
1/2 apple, in small dices |
1 teaspoon ground cinnamon |
1/2 teaspoon ground nutmeg |
Directions:
1. Mix everything in the order given. 2. Put 1-2 tbsp batter into fish iron. 3. Serve with butter/pesto sauce, or jam/syrup/chocolate. |
