Ingredients:
2 stalks celery, chopped |
2 carrots, chopped |
2 garlic cloves, chopped |
3 tablespoons olive oil |
1 cup milk |
1 10-ounce box frozen chopped spinach, thawed and squeezed |
1/2 cup peas |
1/2 cup grated parmesan |
3 eggs |
1/2 cup parsley, chopped |
2 tablespoons dijon mustard |
1 teaspoon salt |
2 6-ounce halibut fillets, flaked, cooked or raw |
2 pounds packaged refrigerated prepared mashed potatoes (such as dinerÅfs choice) |
2 scallions, sliced |

Directions:
1. Saute celery, carrots, and garlic in 3 tablespoons olive oil for 5 minutes. Remove from heat. Stir in milk, spinach, peas, Parmesan, eggs, parsley, Dijon mustard, salt, and flaked halibut. Pour into a 2-quart baking dish. Mix mashed potatoes with 2. scallions and spread on top of the pie. Bake 40 minutes at 400° F. |
