Found this one in an old notebook. It sounds delicious. I would imagine you could use any firm white fish Ingredients:
3 tablespoons butter, melted |
1 medium onion, sliced |
1 1/2 lbs red snapper |
1/2 cup mayonnaise |
1/4 cup parmesan cheese, grated |
2 tablespoons lemon juice |
1 teaspoon paprika |
1/2 teaspoon salt |
1/2 teaspoon oregano |
fresh parsley, chopped |
Directions:
1. Pour butter in a baking dish and arrange sliced onions on the bottom. Place fish in a single layer on top of the onions. 2. Combine mayo, Parmesan Cheese, lemon juice, paprika, salt, oregano and parsley. Spread evenly over the top of the fish. 3. Bake at 350 for 35 to 40 minutes or until fish flakes. |
