From my handwritten collection of recipes 1960's. Ingredients:
1 1/2 cups chopped onions |
1 green pepper, chopped |
1 garlic clove, pressed |
1/4 cup butter |
2 tablespoons olive oil |
1 tablespoon paprika |
1 (15 ounce) can tomatoes |
1 bay leaf |
1/2 fines herbes |
1 teaspoon salt |
2 lbs cod fish fillets, cut in large pieces (can use haddock) |
chopped parsley |
hot mashed potatoes (can use boiled potatoes) |
Directions:
1. Saute onion, pepper and garlic in the butter and oil in skillet, about 10 minutes. Sprinkle with paprika and mix well. Add tomatoes, 1 cup water, bay leaf, fines herbes and salt. Bring to a boil and simmer, uncovered 15 minutes or until sauce is slightly thickened. Add fish, cut in large pieces; cover and simmer 15 minutes longer, or until fish flakes easily with a fork. Add more salt if necessary. Sprinkle with parsley and serve with potatoes. |
