this fried tomato's , just prior to a shore lunch fish fry Ingredients:
4 fist sized firm tomato's |
whatever oil you use for fry-in fish |
season salt( i like mr's dash) |
shore lunch batter, cajun mix, this is like fine pancake flour |
Directions:
1. heat the oil 2. slice the tomato's at least a 1/4 inch thick slabs 3. lay flat on paper plate... 4. sprinkle each tomato slice with Cajun batter 5. flip and coat the opposite side 6. use a spatula and place slices in the oil 7. when the edges go brown flip them 8. total cook time is fast if your oil is hot 9. these are fried prior to your fish fry 10. drain them on paper towel or paper plate...(dont use styrofoam) 11. sprinkle one side with mrs dash while draining 12. the tomato heels are tricky to coat on one side 13. serve hot |
