Fish Fillets with Mustard Butter |

Ingredients:
2 lbs fresh bluefish fillets or 2 lbs thawed, frozen bluefish fillets (, , or other fish fillets) |
3 cups water |
3/4 cup lemon juice |
3 tablespoons lemon juice |
6 tablespoons butter or 6 tablespoons margarine, melted |
4 teaspoons prepared mustard |
3/4 teaspoon salt |
1/2 teaspoon paprika |
chopped parsley |
Directions:
1. Cut fillets into serving size pieces; place in single layer in 12x8x2 inch dish. 2. Mix water and 3/4 cup of the lemon juice in a small bowl; pour over fish. 3. Refrigerate 20 minutes. 4. Drain fish well; arrange in single layer on well greased rack of broiler pan. 5. Mix butter and remaining 3 tablespoons lemon juice, the mustard, salt and paprika in small bowl. 6. Brush fish generously with butter mixture. 7. Broil in preheated broiler, 4 inches from heat source, 4-6 minutes. 8. Carefully turn fish over; baste generously with butter mixture. 9. Broil until fish is opaque throughout, 4-6 minutes longer. 10. Sprinkle with parsley. 11. Heat remaining butter mixture and serve with fish. |
