Fish fillets with Key Largo sauce |

Ingredients:
1 tablespoon(s) basil, chopped |
2 teaspoon(s) capers |
1 egg beaten |
flavored breadcrumbs |
1 1/2 pound(s) flounder, cod or other white fish |
1 lemon juice |
olive oil |
3-4 whole(s) shallots chopped |
2 whole(s) tomatoes chopped |
Directions:
1. Chop and keep separate: tomatoes, shallots, basil. Squeeze lemon for juice. Place shallots in a frying pan with enough oil to cook and cook on low-medium temp. until soft. 2. Beat egg in a shallow bowl. Add about 1 tbsp. water and rebeat. Place breadcrumbs in second shallow bowl. Heat olive oil to coat in a frying pan. Dip fish pieces in egg then crumbs and fry. 3. when fish is almost finished, add tomatoes, basil, capers, and lemon juice to shallots. Just heat through. 4. Serve fish on platter with sauce over it. |
