Fish Fillets with Citrus-Fennel Relish

Use grouper if available; otherwise use firm white fish like mahimahi or halibut.
Ingredients:
1 cup fennel bulb, finely chopped
3/4 cup orange sections, chopped
1/3 cup onion, red, finely chopped
1 tsp lemon rind, grated
1/4 cup lemon, chopped
1 tbsp cider vinegar
1 tbsp olive oil
1 1/2 tsp sugar
1 tsp fresh tarragon, chopped
1/8 tsp ground pepper
24 ounce halibut fillets
1 tbsp olive oil
Directions:
1. Combine first 10 ingredients - fennel through pepper - tossing well to coat.
2. Brush fish with olive oil, sprinkle salt & pepper. Either grill or cook in skillet 4 minutes on a side or til fish flakes easily.
3. Serve with relish.
