Fish Fillets with Citrus-Fennel Relish |

Use grouper if available; otherwise use firm white fish like mahimahi or halibut. Ingredients:
1 cup fennel bulb, finely chopped |
3/4 cup orange sections, chopped |
1/3 cup onion, red, finely chopped |
1 tsp lemon rind, grated |
1/4 cup lemon, chopped |
1 tbsp cider vinegar |
1 tbsp olive oil |
1 1/2 tsp sugar |
1 tsp fresh tarragon, chopped |
1/8 tsp ground pepper |
24 ounce halibut fillets |
1 tbsp olive oil |
Directions:
1. Combine first 10 ingredients - fennel through pepper - tossing well to coat. 2. Brush fish with olive oil, sprinkle salt & pepper. Either grill or cook in skillet 4 minutes on a side or til fish flakes easily. 3. Serve with relish. |
