Fish Eye Salad (tapioca Fruit Salad) |

This recipe is from my Mother in Law. My brother in law told my kids not to eat grandma's salad because it was made with fish eyes!! It took them a while to convince them that there were no fish eyes in the salad and now they love this treat. They even request it by asking for the Fish Eye Salad-hence the name! Prep time does not include the overnight soaking of the tapioca Ingredients:
1 cup pearl tapioca |
2 cups water |
2 cups milk |
1 teaspoon salt |
3/4 cup sugar |
1 (20 ounce) can fruit cocktail, , drained |
3/4 cup whipped cream (my mother in law uses nutriwhip non dairy whipped topping) |
Directions:
1. Soak tapioca and water over night,drain Add milk and salt and cook until transparent. 2. Add sugar, and cool. 3. Add fruit cocktail. 4. Fold in whipped cream. 5. Chill. |
