curry Ingredients:
2 tbsp olive oil |
2 onions, chopped |
2 cups zucchini, sliced |
20 g ginger, peeled and chopped |
1/2 tsp turmeric |
1/2 tsp chili powder |
1 tsp ground coriander |
1 tsp ground cumin |
2 halibut fillets, cut into 2.5 cm/1 pieces |
400 g tomatoes |
Directions:
1. Heat the oil and fry the onion for 2 minutes. 2. Add zucchini and fry for another 2 minutes. 3. Add ginger, garlic, turmeric, chili powder, ground coriander and ground cumin and fry for 20 seconds. 4. Add fish and stir gently. 5. Add the tomatoes. 6. Cover and simmer for 10 minutes or until the fish is tender. 7. Garnish with fresh coriander leaf. |
