A fun alternative to fish cakes, these party style fish balls will be a welcome addition at any gathering. Or, make a big batch and have them with some rice and call it dinner! Ingredients:
1lb flakey white fish (cod, tilapia, etc) |
1cu sour cream |
2cu panko bread crumbs |
2 eggs |
2 tsp old bay |
2 tsp salt |
1 tsp black pepper |
1 lemon |
oil for frying |
Directions:
1. Boil the fish until cooked and flakey 2. Flake the fish with a fork in a bowl until no large chunks remain 3. Beat the 2 whole eggs and combine with fish 4. Add sour cream, 1 cu panko and seasoning to the bowl 5. Zest the lemon and squeeze the juice into the bowl 6. Mix very thoroughly. The mixture should form together but not be gooey. 7. Pour the remaining panko into a small bowl for later 8. Add the oil to your dutch-oven / deep pan to about an inch deep and bring to approximately 375 9. From the fish mixture into ping-pong sized balls 10. Roll the ball around in the remaining panko and drop in oil (should cover about half of the ball. 11. After 3-4 minutes, use a slotted spoon to turn the balls over onto the un-cooked side 12. After 3-4 more minutes, remove to a draining rack and sprinkle with a little salt 13. Let cool at least 5 minutes |
