Ingredients:
1 medium onion or leek, chopped |
2 tsp minced garlic |
1 large stalk celery |
e1 tbsp fennel seeds, crushed |
1 tsp crushed red pepper flakes |
1 28 oz can tomato |
1 cup white wine |
2 cups fish stock, or chicken stock |
1 lb fresh or frozen fish fillets, shrimp, and scallops |
1/4 cup chopped parsley |
Directions:
1. in a nonstick saucepan, heat oil over med heat; cook onion and garlic until softened, about 5 mins 2. add celery, fennel seeds, red paper flakes, tomatoes, wine, and fish stock; bring to boil. reduce heat and simmer for 5 mins 3. ad fish and cook until opaque. add parsley and season to taste with S and P. DONE |
