This is my adaptation of a recipe recently printed in a cooking magazine. Ingredients:
1 t olive oil |
2 cups chopped onion |
1 cup sliced celery |
1 cup sliced carrot |
3-4 cloves garlic, crushed |
1 jalapeno, minced |
2 cups cubed potato |
5 cups chicken stock |
15 oz can crushed tomatoes |
1/2 cup chopped cilantro |
1 pound cod, cut into bite sized pieces |
1 pound medium shrimp, shelled, deveined |
1 lime, zested and juiced |
salt and pepper to taste |
Directions:
1. Heat olive oil over med high heat. Saute onion, celery, carrot, garlic and jalapeno about 5 minutes. 2. Add potato, tomatoes, and stock. Simmer til potatoes are tender. 3. Add fish, shrimp, lime juice and zest and cilantro. Cook about 5 minutes til shrimp are pink and fish is cooked. Season to taste with salt and pepper. |
