I made this for a dinner party...an easy take for caviar being served on potato rounds or scooped out potatoes. The salty crisp chips are the perfect foil for the caviar and the creme fraiche.
Ingredients:
2/3 cup creme fraiche
1 1/2 teaspoons grated lemon peel
1 teaspoon chopped chives
6 ounces caviar, preferably osetra
12 ounces baked potato chips (i use kettle lightly salted baked chips, they are perfect little rounds and flat)
Directions:
1. Stir together the creme fraiche, zest, chives and a little salt to taste. Chill until read to use.
2. When ready to serve, put the creme fraiche on the chips, top with a dollop of caviar and serve.
3. I generally put the chips on a plate, put the caviar in a little glass bowl set over ice, same with the creme fraiche, and let my guests make their own.
