Firecracker Sesame Chicken |

We needed a new chicken recipe - this one came to me in an e-mail from Smithfield, and the boys and I really enjoyed the sweet/spicy flavor. Ingredients:
1 1/2 lbs chicken breasts, diced |
1/2 teaspoon salt |
1/2 teaspoon pepper |
2 tablespoons canola oil |
1 garlic clove, minced |
1 cup carrot, sliced into rounds |
1 cup snow peas, trimmed |
1 red pepper, cut into thin strips |
1/3 cup soy sauce |
3 tablespoons chili-garlic sauce |
1 tablespoon orange marmalade |
1 tablespoon sesame oil |
1 tablespoon sesame seeds (optional) |
1/4 cup diced green onion |
2 cups cooked long-grain rice |
Directions:
1. Heat canola oil in a large skillet over medium high heat. 2. In a small bowl, whisk together soy sauce, chili garlic sauce, sesame oil, and orange marmalade; set aside. 3. Season chicken with salt and pepper. Add chicken to the skillet and saute until golden brown, about 5 – 7 minutes. Remove chicken from the skillet. 4. Add carrots, snow peas and red pepper to the skillet; saute for about 5 minutes or until vegetables are crisp tender. Add chicken back to. 5. the skillet, along with the garlic; saute for 1 minute. Add sauce to the skillet and cook for another 5 minutes or until sauce is thickened. Serve over white rice. |
