Fire Escape Flank Steak

Ingredients:
1/4 cup vegetable oil
3 tablespoons lime juice
1 tablespoon minced garlic
1 teaspoon ground cumin
1 teaspoon chili powder
1 -2 jalapeno pepper, stemmed and minced
2 tablespoons minced fresh cilantro leaves
1 flank steak, about 2 pounds trimmed of fat
salt
Directions:
1. Whisk oil, lime juice, garlic, cumin, chili powder, jalapenos, and cilantro together in a small bowl.
2. Pace the meat in a zip lock bag pour the marinade over the meat cover and refrigerate for at least one hour but I do it over night.
3. Light the grill.
4. Generously sprinkle both sides of the steak with salt to taste.
5. Scrape the hot grill surface clean.
6. Grill the steak, turning once, until done the way you like it, 8 to 10 minutes for medium rare.
7. Transfer steak to platter and carve, cutting meat into thin slices across the grain.
