3 cups cherry tomatoes, cut into halves (or larger ones can be cut into quarters) |
1 large green bell pepper, seeded and chopped coarsely |
1 large red onion, finely chopped |
1/4 cup cider vinegar |
1/2 teaspoon salt |
1 1/2 teaspoons mustard seeds |
1 1/2 teaspoons celery seeds |
4 teaspoons sugar |
1/8 teaspoon ground cayenne pepper |
1/2 teaspoon black pepper |
1/4 cup water |
Directions:
1. In a large bowl, combine the tomatoes, bell pepper and onion. Toss to mix. 2. Mix together the vinegar, salt, mustard seed, celery seed, sugar, cayenne pepper, black pepper and water in a small saucepan and bring to a boil. After boiling for 1-2 minutes, pour the mixture over the tomato / pepper / onion mixture. 3. Once cool, place in a tightly covered dish and refrigerate for at least 4 hours before serving. Will store up to 48 hours refrigerated. |
