Fionas Mums Black Gingerbread |

Another recipe kindly given to me by a friend, this time my Art School pal Fiona's mum. She baked hers in a gigantic ancient Aga stove. The Aga compartment temperature has been converted for regular stoves. Ingredients:
8 oz. margarine |
8 oz. soft dark brown sugar |
8 oz. treacle |
8 oz. plain flour, sifted together with |
1 heaped teaspoon ground ginger |
1 heaped teaspoon ground mixed spice, and |
half a teaspoon of baking soda |
2 eggs, beaten |
about 3/4 cup of boiling water |
Directions:
1. Preheat the oven to Gas Mark 3 160C/325F. 2. In a pan, melt together the margarine, sugar and treacle. See Photo 3. Add the flour, ginger, mixed spice and baking soda. Mix all together. See Photo 4. Add the eggs and the boiling water. Mix in. 5. Put in a greased loaf tin lined with greased baking paper, and bake for 55 minutes. See Photo |
