Fingerling Potatoes Steamed In White Wine |

FINGERLING POTATOES STEAMED IN WHITE WINE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Cullen Estate in Allen, Texas in 1984. Ingredients:
1 cup white wine |
1/2 cup chicken broth |
1 pound fingerling potatoes |
1 tablespoon olive oil |
1 tablespoon chopped fresh tarragon |
1 teaspoon salt |
1 teaspoon freshly ground black pepper |
Directions:
1. Bring wine and broth to boil in bottom of a steamer. 2. Place potatoes in one layer in top of steamer and cover then cook 13 minutes. 3. Remove potatoes and sprinkle with oil and tarragon then season with salt and pepper. |
