Fingerling Potato Salad With Tarragon |

This is a great potato salad recipe that is great on taste and very high in the impression department. Fingerlings are wonderful potatoes that are high on taste. Enjoy Ingredients:
2 pounds fingerling potatoes |
3 tablespoons tarragon vinegar divided use |
1 tablespoon dijon mustard |
1/2 teaspoon salt |
1/2 teaspoon freshly ground black pepper |
1/2 cup extra virgin olive oil |
1 minced shallot |
1 minced clove garlic |
2 tablespoons minced parsley |
1 tablespoon minced tarragon |
Directions:
1. Place potatoes in large pot and fill with cold water to cover. 2. Heat to boil then simmer until potatoes are tender about 15 minutes. 3. Drain well then set aside to cool slightly. 4. Slice potatoes then toss with 2 tablespoons vinegar. 5. Whisk remaining vinegar, mustard, salt and pepper in small bowl then slowly whisk in olive oil. 6. Add shallot and garlic and whisk to combine then pour over potatoes and gently toss. 7. Add parsley and tarragon then toss gently and serve at room temperature. |
