Fingerling Potato and Shallots |

I love fingerling potatoes, they are so rich and sweet! Wanted to make something quick to go with steaks. Ingredients:
1 lb fingerling potato, washed |
1 small shallot |
4 -5 tablespoons extra virgin olive oil |
1 dash salt and pepper |
Directions:
1. Slice the fingerlings to bite size. Boil in water until tender. While potatoes are boiling, dice a shallot and start cooking in the olive oil, enough to coat the pan. Add the potatoes and cook until lightly browned. Salt and pepper to taste. |
