The best cinnamon-nut coffee cake I have ever had. The filling is in the middle and on the top of the cake! Ingredients:

1/2 cup butter (softened) |
1 cup sugar |
2 eggs |
1/2 tsp. salt |
2 cups flour |
1 tsp. baking powder |
1 tsp. baking soda |
1 cup buttermilk |
2 tsp vanilla |
filling/topping |
1/2 cup brown sugar |
1/4 cup white sugar |
2 tbsp. flour |
2 1/2 to 3 tbsp. softened butter |
1/2 cup chopped nuts (i use pecans and heap the amount) |
1 1/2 tsp. cinnamon (shake a little extra in) |
Directions:
1. Preheat oven to 350 degrees. Prepare 9 x 9 baking pan by greasing well. 2. Cake: 3. Cream together butter, sugar and eggs. Sift dry ingredients together and add alternately with buttermilk to first mixture; add vanilla. 4. Filling: 5. Work all ingredients together until crumbly. 6. Assembly: 7. Pour half of the batter into greased baking pan. Top with at least half of filling. Pour remainder of batter on top of filling/topping. Top with remainder of filling/topping. Bake on middle rack at 350 degrees for 35-40 minutes or until crumbs of cake just stick to toothpick when tested. |
