Filipino-style Chicken Curry |

A recipe my mother taught me back in my early college years. perfect with philippines' native chicken, but easier with dressed chicken, readily available in the market Ingredients:
1 kg chicken, whole or choice cuts (breasts, thighs or wings) |
curry powder |
3 cups fresh coconut milk |
250 g carrots, slice into strips |
250 g green beans (baguio beans), cut by 1-1.5 |
250 g potatoes, peeled and cubed 0.5' x 0.5 |
cooking oil (vegetable / corn) |
2 medium-sized onion, minced |
1 clove garlic, minced |
salt and pepper |
calamansi (optional) |
Directions:
1. Cut chicken into 1x1 inch cubes. 2. Saute garlic and onion. 3. Saute chicken until tender. 4. Pour milk in pan. 5. Cook over low fire, with occasional stirring. 6. Add potatoes, carrots and beans. 7. Add the curry powder. Stir. 8. Season with salt and pepper to taste. 9. Cook for another 5-8 mins, but don't overcook the vegetables. 10. Serve hot. 11. Add calamansi juice to the servings as desired. |
