Filipino Ambrosia Fruit Salad With Macapuno |

This is a fruit salad my mom used to make. Macapuno is a young coconut. The Macapuno Strings and Sweet Coconut Gel can be found in Asian markets and are usually in a glass jar. It's great for potlucks and can be easily frozen. Variations include adding cheddar cheese, nuts such as macadamia or cashews, chopped fresh apples or other fruits such as mandarin oranges, bananas, etc. Ingredients:
2 (29 ounce) cans fruit cocktail, drained well |
1 cup macapuno strings, drained well |
1 cup coconut gel, drained well |
1 (7 5/8 ounce) can nestle cream |
7 ounces nestle sweetened condensed milk |
4 ounces cream cheese, softened at room temp |
Directions:
1. Drain the fruit cocktail, macapuno and coconut gel well, set aside. 2. With the back of a spoon blend the cream cheese with 1/2 can of condensed milk and mix until smooth. 3. You can use more condensed milk and/or cream cheese if desired. 4. In a large bowl, combine all ingredients together. 5. Chill for 30min-1hr or freeze. 6. Enjoy! |
