Filet of Flounder With Oyster Sauce |

This is fancy enough to serve to your guests at your next dinner party. Serve my Oyster Sauce ontop of fish along with some boiled potatoes on the side. Some roasted tomatoes and green beans and you will be the talk of the dinner party :) Pol Martin Cookbook. Ingredients:
1/2 teaspoon white pepper |
1/2 teaspoon black pepper |
1/4 teaspoon dry mustard |
1/4 teaspoon cayenne pepper |
1/2 teaspoon celery seed |
1/4 ground ginger |
1 cup flour |
4 flounder fillets |
1 cup milk |
3 tablespoons butter |
1 1/2 cups oyster sauce |
Directions:
1. place spices in mortar and grind together with pestle. 2. Mix flour with spices. 3. dip filets in milk, then dredge in spiced flour. 4. heat butter in cast iron pan over medium heat. add filets and cook 3 minutes on each side. 5. remove fish and serve with oyster sauce. |
