This dish is a nice cool break from the many spicy dishes i grew up with, the yogurt and cucumber really compliment each other.
Ingredients:
1 large cucumber, grated( your choice of normal or english)
3/4 cup plain yogurt( whole milk good, homemade-wow!)
1/2 tsp roasted cumin powder
1/4 tsp clove powder
1/2 tsp red chilli powder
optional
1 tsp grains of paradise( if you dont have cumin or clove powder)
salt to your liking
Directions:
1. In a good mixing bowl, preferrably glass, mix together the grated cucumber, yogurt, cumin, clove and red chilli powder.
2. cover with a clear plastic wrap to seal out any foreign smell
3. refrigerate for 30 minutes to an hour and serve chilled with simple dishes such as dhaal or garlic naan
4. You will find this raita to be similar to tzaziki used for gyros, however it is a indo-fijian inspired traditional dish
