Figs Poached With Red Wine And Tea |

FIGS POACHED WITH RED WINE AND TEA This recipe came from an estate sale. I obtained it when I purchased the family collection from the Vassar Estate in Longview, Texas in 1988. Ingredients:
9-1/2 ounces dried figs |
3/4 cup brandy |
3/4 cup red wine |
3/4 cup honey |
juice and zest of 2 oranges |
juice and zest of 2 lemons |
2 cloves |
2 cinnamon sticks |
1 vanilla bean split in half |
1/3 cup strong black tea |
Directions:
1. Rinse figs under hot water then drain and place in bowl. 2. Pour brandy over figs then cover and set aside for 6 hours or overnight. 3. Remove figs from brandy reserving brandy and set aside. 4. Pour brandy into medium saucepan and add all other ingredients. 5. Place saucepan over low to medium heat and simmer gently for 30 minutes. 6. Strain mixture through fine sieve and discard spices and citrus zest. 7. Return syrup to pan and add figs then place over medium heat and simmer 1 hour. 8. Remove figs from syrup. 9. Slice figs in half and serve with a little syrup poured over and mascarpone or ice cream. |
