~~A Sweet Pie~~
Ingredients:
1 stick of butter,unsalted(no sub.please,just real butter)
1/4 cup brown sugar,firmly packed
6 tablespoons corn syrup
2 cups figs,dried,and quartered
2 cups walnuts,chopped coarsely
1/4 cup heavy cream
1/2 teaspoon cinnamon
1 crumb crust
for creamy sauce
1/2 cup brown sugar,firmly packed
2 tablespoons corn syrup
2 -1/2 tablespoons instant espresso powder
1-1/2 tablespoons butter,unsalted
3 oz unsweetened chocolate,chopped
1/2 cup heavy cream
1-1/2 tablespoons coffee liqueur
combine the brown sugar,corn syrup,espresso powder,and butter in pan,bring mixture to boil,and continue to boil(watching,stirring) for about 1 to 1/2 minutes.remove the pan from heat and stir in the chocolate,and heavy cream,stir until chocolate melts and sauce is smooth.pour sauce through a fine mesh strainer into container. stir in coffee liqueur,cool,cover,refrigerate.reheat sauce before serving with slices of pie.
Directions:
1. For Pie:
2. Combine the butter,brown sugar,and corn syrup in pan.
3. Bring to boil.
4. Boil mixture for about 1-1/2 minutes.
5. Stir in the figs,walnuts,heavy cream,and cinnamon.
6. Bring back to boil.
7. Reduce heat to simmer and cook for about 5 minutes.
8. Fill the crumb crust with hot fig mixture.
9. Cool.
10. Cover with plastic wrap,and refrigerate until completely set,about 4 hours.
11. Top each slice with the Creamy Sauce
