An unusual and delicious first course, especially good with an Italian dinner of pasta or fish. You can't get much easier for a visual and gustatory delight! Ingredients:
4 handfuls rucola |
4 ripe black or green figs |
8 tbs soft mild goat cheese |
4 tsp. honey (preferably wild honey) |
4 tsp. balsamico vinegar |
scant handful toasted pine nuts |
Directions:
1. Spread a handful of rucola on each of 4 salad plates. 2. Wash, dry, and split the figs carefully into sixths, cutting not quite through to the bottom so they spread out like a fan. 3. Fill each fig with 2 TBS of the goat cheese. 4. Drizzle each fig with 1 tsp. honey and 1 tsp. Balsamico. 5. Sprinkle pine nuts over top and serve immediately, or keep chilled until serving (not longer than half an hour). 6. Enjoy! |
