Fig, Carrot, and Ginger Rice Pilaf |

Make a quick and easy rice side dish by adding chopped dried figs, carrot and fresh ginger to microwave brown rice. Ingredients:
1 (8.8-ounce) pouch microwaveable cooked brown rice (such as uncle ben's ready rice) |
1 tablespoon olive oil |
1 cup matchstick-cut carrots |
1 tablespoon minced peeled fresh ginger |
2 garlic cloves, minced |
1/2 cup small dried figs, quartered |
Directions:
1. Heat rice according to package directions; keep warm. 2. While rice cooks, heat oil in a large nonstick skillet over medium-high heat; add carrots, ginger, and garlic. Sauté 3 minutes or until browned. Add figs; sauté 2 minutes or until hot. Remove from heat; stir in rice. Serve immediately. |
