Truly a CAJUN COUNTRY recipe. This recipe came from watching an aunt (who never used measuring utensils) and trying to guesstimate her measurements. Also wonderful for Christmas holiday. Ingredients:
4 1/4 cups flour |
2 cups sugar |
3 teaspoons baking powder |
1 teaspoon baking soda |
1 teaspoon vanilla |
1 teaspoon nutmeg |
1 teaspoon allspice |
1 teaspoon cinnamon |
1 teaspoon ground cloves |
1 teaspoon ginger |
2 cups broken pecans |
1 -2 cup raisins (optional) |
1 -2 cup dates (optional) |
1/2 cup dark molasses |
3/4 cup milk |
1 cup oil |
2 eggs |
8 ounces orange marmalade or 8 ounces orange rind (thin julienne) |
1 quart canned fig, crushed |
Directions:
1. Mix all dry ingredients thoroughly. 2. Mix all liquid ingredients thoroughly. 3. Combine and bake. 4. Bake 350 degrees approximately 1 hour. |
