From the Totally Muffins Cookbook. Ingredients:
1 egg |
1 cup milk |
1/4 cup vegetable oil |
2 teaspoons anise extract |
1 1/4 cups flour |
1/2 cup whole wheat flour |
1 tablespoon baking powder |
1/2 teaspoon salt |
2 tablespoons sugar |
1 tablespoon anise seed |
1/2 cup dried fig, chopped |
Directions:
1. Preheat oven to 375 degrees F. 2. Grease muffin tins or line with paper cups. 3. Whisk together egg, milk, oil and anise extract in a large bowl. 4. In a separate bowl combine flours, baking powder, salt, sugar and aniseeds. Stir with a fork. Add dry ingredients to liquid and stir until evenly moistened. 5. Stir in figs and pour into muffin cups. Bake 15 - 20 minutes or until tester comes out clean. |
