Fig And Goat Cheese Bruschetta |

Had these at a party Saturday night they were so good went like hot cakes. Ingredients:
1-1/4 cups chopped dried mission figs |
1/3 cup sugar |
1/3 cup coarsely chopped orange sections |
1 tsp. orange zest |
1/3 cup fresh orange juice |
1/2 tsp. chopped fresh rosemary |
1/4 tsp. freshly ground black pepper |
40 (1/2 thick) slices french bread baguette, toasted |
1-1/4 cups crumbled goat cheese |
5 tsp. finely chopped walnuts |
Directions:
1. 3 days before serving make the fig jam and refrigerate, then bring to room temperature just before serving on toast. 2. Combine first 7 ingredients in a small saucepan, bring to a boil. 3. Cover and reduce heat and simmer 10 minutes until figs are tender. 4. Uncover and cook 5 minutes until mixture thickens. 5. Remove from heat and cool completely, refrigerate. 6. The Day of serving. 7. Preheat oven to 350*F 8. Toast the bread until light brown on both sides. 9. Preheat oven to broil. 10. Top each bread slice with 1-1/2 tsp. of fig mixture and 1-1/2 tsp. goat cheese. 11. Arrange brushchetta on a baking sheet. 12. Sprinkle evenly with chopped walnuts. 13. Broil 2 minutes until nuts begin to turn brown. 14. Serve warm. |
