Chicken Tortilla soup with a Roasted Red Pepper and Tomato soup base.
Ingredients:
1 (32 ounce) box pacific natural foods organic roasted red pepper and tomato soup
1 (14 ounce) can swanson chicken broth (33% less sodium version)
2 (10 ounce) cans rotel diced tomatoes with lime juice and cilantro
2 (12 ounce) cans green giant southwestern style corn
1 (12 1/2 ounce) can kirkland canned chicken breasts
2 tablespoons dried chopped onions
Directions:
1. Heat Red Pepper and Tomato Soup in Pot.
2. Stir in chicken broth, rotel, onions, and corn.
3. Cook chicken in frying pan, minimal oil necessary.
4. Heat to boil, add chicken.
5. Serving Suggestion: 5 broken tortilla chips and a sprinkle of mexican shredded cheese.
