Easy salad/side Ingredients:
1 can black beans, drained |
1 can corn, drained |
2-3 roma tomatoes, seeded and diced |
either half a sweet onion diced or 2-3 scallions chopped |
chopped cilantro, if desired |
red wine vinegar |
olive oil |
salt |
pepper |
Directions:
1. Combine all the veggies and cilantro if using. 2. Dress with vinegar, oil, salt, and pepper to taste. 3. Serve chilled or room temp. 4. Can serve over rice, scoop up with tortilla chips, or just as a side with an ordinary meal. |
