A recipe from Healthy Cooking . Ingredients:
2 cups torn romaine lettuce |
1/4 cup frozen corn, thawed |
1/3 cup canned black beans, rinsed and drained |
1 medium tomato, chopped |
1 celery rib, chopped |
1 medium carrot (thinly sliced or shredded) |
1/3 cup salsa |
2 tablespoons sour cream |
2 tablespoons ranch salad dressing |
Directions:
1. Combine the first six ingredients. 2. In a small bowl, mix the salsa, sour cream, and ranch dressing. Pour over the salad and toss to coat. 3. Serve immediately. |
