Potato salad with vegetables make it colorful and tasty Ingredients:
3 pounds new red potatoes |
1/3 cup chopped green onion |
1 1/2 cups frozen peas |
1 1/2 cups canned whole kernel corn, drained |
1/2 cup red peppers, chopped |
1 cup mayonnaise |
4 teaspoons white vinegar |
salt and pepper to taste |
Directions:
1. Cut the potatoes into large chunks and boil them in salted water until 2. they are almost tender, not soft. (Its not necessary to peel the 3. potatoes.) 4. Drain the potatoes and let them cool. 5. Cut them into 6. smaller-sized chunks or slices if necessary. 7. Add green onions, frozenpeas, canned corn, red peppers and toss. Mix the mayonnaise and vinegar together. 8. Stir the dressing into the vegetables. 9. Salt and pepper to taste. 10. Refrigerate for several hours or overnight. |
