Spicy fried potatoes topped in salsa, cheese, and sour cream. Ingredients:
4 large red potatoes, cut into 1-inch pieces |
1/2 teaspoon salt (for boiling potatoes) |
1 tablespoon chili powder |
1/4 teaspoon garlic powder |
1/4 teaspoon salt |
1/8 teaspoon pepper |
3 tablespoons canola oil |
1/2 cup shredded cheddar cheese or 1/2 cup monterey jack cheese or 1/2 cup monterey jack pepper cheese |
1/4 cup sour cream |
1/2 cup prepared salsa |
1 green onion, greens sliced thinly (optional for garnish) |
Directions:
1. Boil potatoes in salted water until a knife can easily poke through them. Drain into a colander and let them steam off for about 5 minutes. 2. Heat oil in a large frying pan over medium to medium high heat and add potatoes. 3. Add seasonings to potatoes and cook until they are golden brown and the skins are crispy. About 10 minutes. 4. Plate potatoes and top with remaining ingredients. 5. Enjoy! |
