Another favorite side dish from Low Fat Mexican Recipes. Try serving this as an alternative to rice or potatoes for a nice change of pace.
Ingredients:
2 tablespoons flour
2 tablespoons oil
2 tablespoons onions, diced
3 tablespoons green bell peppers, diced
1 tomato, sliced
29 ounces hominy
2 cups water
1/2 teaspoon garlic salt
1/4 teaspoon oregano
1 dash pepper
Directions:
1. Brown flour in oil.
2. Add onion and saute.
3. Add bell pepper and tomato; stir over medium heat.
4. Stir in drained hominy, water and seasonings.
5. Cover and simer for 15 minutes over medium heat, stirring occasionally.
