Another favorite side dish from Low Fat Mexican Recipes. Try serving this as an alternative to rice or potatoes for a nice change of pace. Ingredients:
2 tablespoons flour |
2 tablespoons oil |
2 tablespoons onions, diced |
3 tablespoons green bell peppers, diced |
1 tomato, sliced |
29 ounces hominy |
2 cups water |
1/2 teaspoon garlic salt |
1/4 teaspoon oregano |
1 dash pepper |
Directions:
1. Brown flour in oil. 2. Add onion and saute. 3. Add bell pepper and tomato; stir over medium heat. 4. Stir in drained hominy, water and seasonings. 5. Cover and simer for 15 minutes over medium heat, stirring occasionally. |
