Two types of melon and other fresh fruit combine with peach preserves in this best of the season dish. Great for dessert or brunch. Ingredients:
6 (6 inch) flour tortillas |
3 tablespoons butter, melted |
3 tablespoons cinnamon sugar |
2 cups fresh strawberries, halved |
1 cup cantaloupe, cubed |
1 cup honeydew, cubed |
1 large navel orange, peeled, and sectioned |
1/2 cup peach preserves |
whipped topping (optional) |
additional strawberry (optional) |
Directions:
1. Place tortillas on ungreased baking sheets, brush with butter, and sprinkle with cinnamon sugar. 2. Cut each tortilla into 6 wedges. 3. Bakde at 350 degrees for 12-15 minutes or until lightly browned, cool on wire racks. 4. In a large bowl, combine the strawberries, melons, and orange. Stir in preserves. 5. Using a slotted spoon, spoon into 6 dessert cups. 6. Serve with tortilla chips. 7. Garnish with whipped topping and extra strawberries if desired. |
