Kids who don't eat fresh fruits can be encouraged to eat canned fruit if it's packaged in a tasty quick bread like this. Ingredients:
3 c all purpose flour |
2/3 c sugar |
1tspn baking soda |
2 eggs, beaten |
1 (8oz) lemon lowfat yogurt |
1/3 c vegetable oil |
1 tspn grated lemon peel |
1 can (15oz) del monte fiesta fruit cocktail, drained |
1/2 c chopped walnuts or pecans |
Directions:
1. Preheat oven to 350deg F. Combine flour, sugar, and baking soda, mix well. 2. Blend eggs with yogurt, oil and lemon peel. Add dry ingredients along with the fruit cocktail and nuts; stir just enough to blend. Spoon into greased 9x5- inch loaf pan or two 8x4 loaf pan. 3. Bake 60 - 70 minutes or until wooden pick inserted into center comes out clean. Let it stand in pan for 10 minutes. Turn out onto wire rack, cool completely |
