Fiesta Chicken & Rice Bake |

Ingredients:
1 can 98% fat-free cream of chicken soup |
1 cup chunky salsa |
1/2 cup water |
1 cup whole kernel corn |
3/4 cup uncooked white rice (i used uncle ben's) |
4 boneless skinless chicken breasts (about 1 lb) |
1/2 cup shredded cheese (2 oz.) |
Directions:
1. In a 2 qt shallow baking dish mix soup, salsa, water, corn and rice. 2. Place chicken on rice mixture. 3. Sprinkle chicken with paprika. 4. Cover. 5. bake at 375 degrees for 45-60 minutes or until chicken is done and rice is tender, Sprinkle with cheese. |
