FIESTA BEANS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Glib Estate in Mesquite, Texas in 1982. Ingredients:
6 slices bacon |
1/2 green bell pepper chopped |
1 large white onion chopped |
1/2 pound boiled ham slivered |
1/2 cup ketchup |
2 cans baked beans |
1/4 cup brown sugar |
1 tablespoon worcestershire sauce |
1 teaspoon salt |
2 teaspoons freshly ground black pepper |
Directions:
1. Preheat oven to 350. 2. In large heavy skillet cook bacon until crisp then drain well and crumble. 3. Drain all but 2 tablespoons bacon grease from skillet and add the green pepper and onion. 4. Sauté gently for 5 minutes then add ham and cook 3 minutes longer. 5. Combine all ingredients and pour into baking dish then bake 1 hour and serve hot. |
