Colorful dip - serve with tortillas and grilled chicken or tortilla chips Ingredients:
1 (15 ounce) can black beans |
1 (15 ounce) can red beans |
1 (15 ounce) can pinto beans |
1 (15 ounce) can black-eyed peas |
1 (15 ounce) can garbanzo beans (optional) |
1 large sweet pepper, chopped (green, yellow, orange) |
1 large red onion |
1 (12 -16 ounce) package frozen corn kernels |
1 jalapeno pepper, chopped (no seeds) |
4 roma tomatoes, chopped |
1/4 cup fresh parsley or 1/4 cup fresh cilantro, chopped |
4 limes, juice of |
10 -20 drops tabasco sauce |
salt, to taste |
Directions:
1. Stir fry or broil the corn. 2. Combine all ingredients and chill before serving. |
